Mr. Cantauw was formerly working at the famous Gourmet restaurant “Graugans” of the Hyatt Regency in Cologne, Germany, which style is influenced by crossover and Euro-Asian cuisine. In earlier years he received his training at the restaurant “Josefine” (1 star in the Guide de Michelin) famed for its classical French/Mediterranean cuisine.
